I was in the middle of multitasking my way through the afternoon—baking and working—when it hit me. I forgot the lemon zest. The one ingredient to make these cookies pop, and I forgot all about it. They were supposed to be lemon poppy seed sugar cookies. They still have lemon extract in them, but now they’re not-so-lemony poppy seed sugar cookies.

I felt a little like Kronk from The Emperor’s New Groove when he forgets about his spinach puffs that are in the oven.

“Is something burning?”
”My SPINACH PUFFS!”
